Brie is at its best when the rind gives when pressed slightly with your finger. The point at which the cheese is ripe and ready for eating depends on personal taste. Young Brie (45+ days prior to the best before date) has a firm centre and mild flavour; semi-ripened Brie (20-45 days prior to the best before date) has a soft rind with a medium-soft centre and mild flavour; ripened Brie (20 days or less prior to the best before date) is soft.
